Biochemical properties

Serpins are irreversible serine protease inhibitors active against S1, S8 and C14 peptidases [1]. Their common structure is a multi-domain fold containing a bundle of 8 or 9 α-helices and a β-sandwich formed by 3 β-sheets.

Allergological significance

Allergens from this family include hen's egg ovalbumin (Gal d 2) and Z4 from barley, a protein causing allergic reactions to beer [2, 3].
