This family consists of various glycoproteins from plants. Patatin accounts for up to 40% of total soluble protein in potato tubers. Patatin is a storage protein but it also has the enzymatic activity of lipid acyl hydrolase, catalyzing the cleavage of fatty acids from membrane lipids [1]. Members of this family have also been found in vertebrates.
Patatin is a major potato allergen. Its homology and cross-reactivity to the major Hevea brasiliensis latex allergen Hev b 7 explains the observation of potatoes being one of the plat food involved in the latex-fruit syndrome [2].
